Waking up on my fortieth birthday I was expecting a blizzard. It's been a relatively quiet winter in regards to snow, but the forecast was for a pretty good snowfall. Yet, old man winter fizzled out, once again. I'm not complaining, though.
We live in a small town with limited shopping and eating establishments. I love the charm of small town living, yet, traveling to the city is a must when it comes to a lot of the things we need or desire. Previously, in the week, my hubby and I had decided to enjoy a rare lunch date together, as a way to celebrate my milestone birthday. As talk of the impending storm emerged in the days prior to my birthday, I thought it was going to be a wash-out. To my delight, we woke to find there was no issue with the weather and we were off.
My oldest daughter gave me a list of things she wanted me to pick up, which she needed for some school projects There was a couple of ingredients I needed to make a special birthday treat with the kids when they got back from school. I wanted to find a new bathing suit for my youngest daughter, as she is back in swimming lessons again this session, and we also required a chew toy for our chewy pup. We didn't have a lot of time to get all these errands complete, so we decided to visit Walmart where we could find everything in one stop.
After a peaceful lunch together, we ventured over to Walmart, where we were pleasantly surprised by it being relatively slow.
We were able to quickly locate the school supplies and the dog toy. I turned my attention to finding #EqualCanada to use in my birthday baking. I've been inspired by my fellow bloggers and all the treats they've been making with Equal Sucralose.
Packaged in a large 275g canister, it is perfect for baking, and it is on roll back at Walmart! I found it right where my fellow bloggers said it would be - in the pharmacy section.
The canister is so convenient with its snap tight lid and a wide opening, allowing for easy scooping with a measuring spoon or cup. As a zero calorie sweetener, it is the perfect option for this forty year old!
By visiting Equal, I found a recipe resource and decided upon Peanut Butter Chocolate Bars. The recipe is simple and I had most ingredients on hand and knew the kids would be able to feel a sense of accomplishment putting them together as a treat for momma's birthday.
When the kids got home from school we put together the bars and then popped them in the oven while we were eating supper. They turned out fantastic. Being, fairly new to baking with Equal, we found them pleasantly light and tasty. These bars are equally delicious warm or cold.
So, I bid my thirties a fond farewell and embarked on a new decade. My birthday turned out to be a really nice day even with the blizzard. (or lack of it) Most importantly, I spent the day with my loved ones, and for that I am thankful.
