I love coconut macaroons. Not only are coconut macaroons a tasty treat, they are also easy to assemble.

Take this recipe, which I found at Tropical Traditions.
Chocolate Coconut Macaroons
2 egg whites
1/2 teaspoon vanilla
1/2 cup of organic sugar
1 cup of dried shredded coconut
3 oz of organic chocolate
Preheat oven to 320 F
Whip egg white until it forms stiff peaks
While continuing to mix, add vanilla and slowly add sugar
Mix in the dried coconut after mixing in the sugar
Melt the chocolate and fold into the coconut mixture
Drop by teaspoons onto parchment paper lined cookie sheets
Bake for 15 minutes in the preheated oven
Cool and Enjoy!
