Living is easy in the summer! What is better than long hot days, accompanied by all the bounty of our local harvest? Summer recipes are the best, especially when we can use what is growing right in our own backyard.
This week in your Life Made Delicious newsletter you will have found an abundance of mouth-watering recipes designed to heat up the summer. I can't wait to try some of the recipes during our summer vacation, actually we are heading out on holidays this coming Sunday! For the next two weeks you will find our family in the beautiful Bruce Peninsula, Ontario. We are going to a cottage which has been in our family for 50+ years. It is nothing fancy, but it is away from home and the hustle and bustle of every day life.
Before we go, I wanted to share one of my favourite kid-friendly treats, a perfect accompaniment to any summer-time fare.
These are my ice cream cone cupcakes.
I found a cone shaped cake pan on sale, which after a couple attempts I am getting the hang of. I used Betty Crocker French Vanilla cake mix for the cupcakes and iced with my all time favourite, fluffy white icing. I love fluffy white icing because it is light and airy and looks like ice cream atop my cone cupcake. I finish with a sprinkle of sundae topping and a scoop or two of ice cream and you have a quick and easy summer time treat, and the kids love them!
