Strawberry Delight! {#LMDconnector}



June is delicious!


I love warm days which stretch into warm evenings. I get excited, by the promise of a long hot summer (with the end of school). And we enjoy strawberries by the handful, who doesn't love seeing strawberry sweet juiciness dripping off the kids chins? Believe it or not, we begin the countdown to local strawberry days as soon as the fields are bare from snow! And of course, as we near the end of June the excitement builds for our holiday celebrating US - Canada Day!

As a Life Made Delicious connector I've been stalking the site to find some easy recipes for using our strawberry bounty.

Yet, if you are wanting to impress, try this strawberry recipe, which starts with a Betty Crocker Angel Food mix! Beat 2 eggs with a 1/3 cup of white sugar, and 3 TBS of corn starch. Add a pinch of salt, 1/2 TSP of vanilla and a can of crushed pineapple. Cook until thickened. Then chill this mixture (overnight if you can). The next day whip up some real whipped cream, fold the whipped cream with the pineapple mixture. Slice your angel food cake into three layers and spread your pineapple mixture on each layer. Finally topping your cake with the mixture and then fresh strawberries. I am going to make this for Canada Day and will post a picture before we devour it.

Be sure to pick up some local berries at your farmers market or roadside stand. Or, even better take the kids and pick your own (if you can). Enjoy your strawberry delight!

now this cake says Happy Birthday Canada; we have a place 15 miles away where we go to pick Strawberries- oh la la so good.

That cake looks delicious! My mom and sister were berry picking yesterday and I stemmed all 63 lbs. of the berries they picked! This cake would be great with the fresh berries.

oh that looks yummy , i wouldnt have thought to add the pineapple so that is great, i am going to try this for sure

There's so many big and sweet strawberry right now and this recipe seems very easy to make! I think I am going to try it! I love easy recipe!

In 10 minutes my 2 little kids had the biggest bucket FULL of strawberries, I didn't know what to do with them all! Great post.
